A Mexican Street Corn-Inspired Pizza Hits the Menu at Dewey’s Pizza on August 16

Is Mexican street corn your thing? Then you’re going to devour every slice of Dewey’s new Elote seasonal pizza hitting the menu August 16 through September 26. The culinary team at Dewey’s Pizza is always exploring trending flavors and ingredients, and they love coming up with ways to reinvent a classic dish in the form of a pizza. That’s how popular seasonal pies, including the famous Tito Santana, a spin on a taco, and the Yukon Cornelius, a loaded baked potato-inspired pie were created. So it’s no surprise the culinary team whipped up another home run concoction—the Elote seasonal pizza. Based on the popular street food served in Mexico, elote is traditionally corn served on the cob with bursts of flavor in every bite. Spicy, tangy, and creamy flavors come from mayo, a sprinkle of cheese, and chili powder. Dewey’s take on the dish will have you feeling like you’re on a flavor journey right in the heart of Mexico City.

On top of Dewey’s traditional, hand-tossed crust, the dough is primed with olive oil and mozzarella to start. A generous portion of house-roasted corn and poblano peppers add sweet and spicy notes along with red onion and queso fresco. Once it’s taken out of the oven, a generous squeeze of house-made Tajin crema and a dusting of cilantro are added on top. The combination of flavors in the fresh ingredients—plus the attention to detail in the house-roasted corn that’s shucked and cut off the cob by hand—are what really takes this pizza to the next level. Corn is also at its peak freshness in August and September, which provides an abundance of texture and flavor. In the house-made tangy crema, which tops off the pie, cayenne, lime, Tajin, and a little roasted garlic pairs with the roasted corn flavors. For the vegetarians, this pizza is a dream and if you’re team Tito Santana, you’re sure to love the new elote-inspired pie. To expand your flavors, order a half-and-half pizza—half Elote and half Southwest BBQ Chicken, a match that pairs well together.

As for a beverage, pair the pie with one of Dewey’s hand-selected wines such as a crisp sauvignon blanc or opt for a light beer.
